Le Bord des Mondes: were it possible to taste this “border between two worlds”, to savour the departure from a land, what would it taste like? What would it feel like? What colour would it be? Cuisine is a territory in perpetual movement, undergoing some extreme metamorphoses, and thus an eternal source of creativity and revival. The culinary experience is one of sensation, reflection, discovery and risk, a boundless source of possibilities and reinventions.
In a similar vein to Le Bord des Mondes exhibition at the Palais de Tokyo, a gastronomic itinerary in Paris will explore the culinary border between two worlds. At a different restaurant each week, the chef will showcase his or her own departure from known territories, offering diners a taste of unexpected new horizons. The experience will begin with Pierre Gagnaire at his Rue Balzac restaurant on 24 February 2015 and will continue with 10 more chefs, each in turn serving in their restaurant an imaginative dish inspired by Le Bord des Mondes.
The experience is the brainchild of Fulgurances, who created it to complement their “Itineraries of Contemporary Cuisine” magazine which captures the portraits of 10 chefs in 10 countries. Fulgurances was set up in 2010 as a platform to showcase contemporary cuisine, while supporting the demands and young talents of the industry. Fulgurances is also an on-line magazine (www.fulgurances.com) which reports on news from the culinary world.
